Cook the simple version
One allium, two vegetables, stock, and time make a better winter soup than a long ingredient list. Cook it on an afternoon when the kitchen is already warm, and let it simmer while the evening yoga happens nearby.
Blend or do not, season at the end, and eat the first bowl slowly by a window. The practice of eating without a screen is a relaxation exercise that happens to be dinner.
Let the pot carry the evening
Soup made early removes the evening’s main negotiation. The time it frees is the time the dark weeks are shortest of, and it arrives already warm.
Keep the second day’s portion for lunch; soup improves overnight, which makes it one of the few plans that rewards being made in advance and thought about never again.
